The tencha leaves used in withinUs TruOrganic™ Matcha are premium grade leaves from the first harvest of the year. First harvest leaves are graded from premium, then grade A through D, with premium leaves being considered the best of the best, having the highest quality of aroma and flavour. Due to the cooler temperatures during their growing period, leaves from the first harvest grow more slowly than those from later harvests, allowing the nutrients to fully develop.

withinUs TruOrganic™ Matcha holds JAS/JONA certificates through the Japan Organic and Natural Foods Association, as well as USDA and Canadian Organic Certificates. This level of quality is rare and limited. Our matcha is grown without the use of fertilizers, nitrogen or chemicals, and is routinely tested for purity. The soil in which the plants are grown is also subject to frequent testing, ensuring that there are no contaminants (lead/fluoride) in the product.

TruOrganic™ Matcha is an artisanal blend of the two highest grades of matcha from Japan. This high-grade, traditional matcha is made from tencha leaves that are harvested by hand, dried, and stone ground into a vibrant, emerald-green powder.

What Makes Good Matcha?

Appearance: The brighter the matcha, the better! withinUs TruOrganic™ Matcha is a bright emerald-green colour – this means it contains high levels of chlorophyll, thanks to specialized growing techniques.
Taste: High quality matcha will have a smooth and slightly sweet taste due to high levels of amino acids and L-Theanine, which flourish when the leaves are shaded from the sun during the final weeks before harvest.
Source: High quality matcha originates in Japan. Japanese tea culture dates back to the 12th century - since then, tea planting and harvesting traditions have been specialized and perfected.
Foam: When whisking high quality matcha, a micro layer of foam should form. With lower quality matcha, large air bubbles will form, or there may be no bubbles or foam at all.

How is TruOrganic Matcha different from brewed green tea?

With green tea you steep the leaves and discard them. With matcha, you consume the whole leaf, which has been shade-grown, dried, and stone-ground into a fine powder.

The leaves used for matcha are called tencha, and the shade-growing process dramatically increases their concentration of chlorophyll, antioxidants, L-theanine, and EGCG compared to standard green tea leaves.

The result is that one cup of matcha delivers the nutritional equivalent of approximately ten cups of brewed green tea. You are not steeping a fraction of what the leaf has to offer. You are getting all of it.

Why is it important to buy matcha sourced from Japan versus China?

Matcha originated in Japan over 800 years ago, and the growing practices have been refined over centuries, specific to the soil, climate, and agricultural traditions of the region. Chinese growers have attempted to replicate these conditions, but geography and the absence of that generational expertise mean the result is simply not comparable.

There is also a quality control concern worth noting. Japan has some of the most rigorous agricultural testing standards in the world. Chinese matcha, including some products marketed as organic, has in some cases been found to contain elevated levels of lead due to soil contamination.

TruOrganic Matcha is sourced exclusively from Uji, Kyoto, the historic birthplace of Japanese matcha and the region that has defined quality standards for over 800 years.

How do I make matcha?

Heat water to 75 to 80°C. Do not use boiling water, as it will scald the matcha and cause bitterness.

Add ¼ to ½ tsp of TruOrganic Matcha to a bowl and pour 60ml of warm water over it. Whisk into a smooth paste, then add another 70 to 100ml of water and whisk in a W-shaped motion until a layer of foam forms on the surface.

Pour into your favourite mug and enjoy as is, or top with steamed milk of your choice for a matcha latte.

No. TruOrganic Matcha is 100% pure, certified organic Japanese matcha. Nothing added, nothing removed.

Can I add TruMarine Collagen into TruOrganic matcha?

TruOrganic Matcha is 100% pure matcha with nothing added.

How much caffeine is in withinUs TruOrganic Matcha?

A cup of TruOrganic Matcha contains approximately one-third to one-half the caffeine of a cup of coffee.
